When the space beside Alimentari opened up, an expansion of the restaurant was an option but not Javier’s sole passion. With his travels and career taking him all over the world, Javier chose to do something he knew well; Spanish wines and tapas. Tapas originated in Europe as simply a small plate used to cover your glass from the elements. While tapas can simply mean cheese or a piece of bread, it has also evolved around the globe to something a little more sophisticated; which is what you can find at Paloma Bar de Tapas.
The smaller dishes allow for patrons to try several different flavors from several different dishes, he says. Paloma offers a mix of meats, cheeses, seafood and interesting ingredients that are unlike what you will find from other Chattanooga eateries. “While Alimentari is food for the stomach, Paloma is food for the mind”, says Javier.
